Fajita Marinade


  • 1 c. olive oil
  • 1/3 c. balsamic vinegar
  • 5 cloves garlic, minced
  • 1 small red onion, roughly chopped
  • Juice of 2 limes
  • 2 T. ground cumin
  • 2 T. chili powder
  • 2 T. dried oregano
  • 1 tsp. red pepper flakes (more if you like some heat)
  • 1 tsp. salt
  • 1 tsp. pepper


Combine all of the marinade ingredients; mix well and place in a large heavy plastic storage bag. Add your favorite meat to the bag and refrigerate for at least 8 hours or overnight. Remove meat and discard marinade. Grill meat and assorted veggies. Serve with cheese, sour cream, black olives, lettuce and salsa!
