Steak on a Stick
Many people love food on a stick, and even more people love steak. That is why I decided to put steak on a stick. It doesn’t get any simpler than that.
- 4oz. Fresh Basil
- 2 Cloves of Garlic
- 1/3 Cup Olive Oil
- 1 or 2 Chipotle Peppers
- 1TBL. Red Wine Vinegar
- Salt (to taste)
- Pepper (to taste)
- 2 Rib Eye Steaks
Start by loading your food processor with all the ingredients, except the steaks. Pulse/process till smooth.
Cube the steaks into 1.5” cubes, and trim excess fat. Place in a 1gal zip top bag.
Add just enough marinade to liberally coat the steaks. Reserve whatever marinade is left to use as a sauce when you pull the steaks off the grill.
Place steaks in the fridge for up to 24 hours or no less than 6 hours.
Remove steak from fridge and let them sit at room temperature for 30 minutes.
Put two or three steak cubes on each skewer.
Grill steak over medium-high heat about 2 minutes per side, totalling about 8 minutes, or until cooked to your preferred doneness.
Remove steaks from heat and let rest 15min. before finishing with the reserved marinade.
